This recipe is for bread lovers: a delicious focaccia that is soft and fluffy inside, crispy on the outside and full of flavour.

I love bread, and this focaccia is a real treat: fluffy inside, crispy on the outside and full of flavour.

The dough is simple to prepare, with no sourdough and no kneading required. You just need to make it the day before and let it prove slowly in the fridge overnight.

Made with a mix of white and wholemeal flour, it provides a little extra fibre. Top it with zaatar, serve it alongside a meal or use it to make delicious homemade sandwiches.

It’s perfect for busy days when you want fresh, homemade bread without spending hours in the kitchen.

What you need for 1 focaccia (12 servings):

  • 350 g white bread flour (all-purpose white flour also works)

  • 150 g wholemeal bread flour (all-purpose wholemeal flour also works)

  • 10 g sea salt

  • 7 g instant yeast

  • 450 g water at room temperature

  • 4 tablespoons of olive oil

  • flaky sea salt, such as Maldon

  • 1 tbsp Zaatar or any topping of your choice (optional)

The recipe:

  1.  In a bowl, whisk together the flour, salt and instant yeast.

  2. Add the water.

  3. Using a rubber spatula, mix until the liquid is absorbed and the ingredients form a sticky dough ball.

  4. Rub the surface of the dough with olive oil.

  5. Cover the bowl with a lid or plastic wrap and place in the refrigerator for at least 12 hours or for as long as three days.

  6. Pour 2 tablespoons of oil into the centre of an oven dish. You can also line it with parchment paper before.

  7. Deflate the dough with your fingers and pour in the dish.

  8. Let the dough rest for approximately 3 hours depending on the temperature of your room.

  9. Preheat your oven to 230 °C.

  10. Pour a tablespoon of oil over the dough. Using all of your fingers, press straight down to create deep dimples.

  11. Sprinkle with salt flakes and Zaatar if using.

  12. Bake in the oven for 25-30 minutes or until golden.

The benefits:

  • A little extra fibre from the wholemeal flour.

  • Healthy fats and no added sugar!
